Domaine d’Élise

The labels of Domaine d’Élise tell the story of Chablis and Petit Chablis, alongside a very limited production of Premier Cru Côte de Léchet. In the winery, Frédéric Prain chooses to intervene as little as possible: the musts naturally settle, ferment in cement tanks lined with steel, and mature for several months on the fine lees, with a single racking and a light final filtration. The result is Chardonnay of finesse and great balance: on the nose aromas of citrus, white fruit, and dried flowers, on the palate a smooth texture, supported by freshness and a chalky finish. The Petit Chablis are livelier and more direct, while the Chablis are rounder and deeper: the most classic Chablisien, without shortcuts.grapes, for this reason Frédéric Prain chooses a deliberately late harvest: in the cellar, ripe and rich grapes arrive, without sacrificing the freshness that defines the Chablis style. A gradual replanting has finally renewed about a third of the vines, replacing the older stocks.
