Schiava 'Cum Vineis Sclavis' Cavit 2024
The Schiava 'Cum Vineis Sclavis' by Cavit is a fresh and immediate red that enhances one of the oldest varieties of Trentino. The name ‘Cum Vineis Sclavis’ comes from a medieval Latin expression meaning ‘with slave vines’ and refers to the ancient technique used by farmers to tie young vines to rigid supports to guide their growth in orderly rows. From this practice, the term Schiava was later born, the name of the grape variety featured in this wine. The red winemaking with about seven days of maceration and the subsequent aging in steel and cement on the fine lees preserve the typical varietal fragrance. On the nose, it offers hints of cherry and raspberry. The sip is light and smooth with a delicate bitter note on the finish. It pairs well with typical cured meats from Trentino tradition and balances nicely with a platter of Speck
